First score the duck breast skin in a criss-cross fashion.

Then in a bowl blend the Chefs’ honey, vinegar, soy sauce, and pepper.

Now in another bowl, coat the duck in this marinade.

Put a lid on and leave for approx. 1 hour or overnight.


Set the oven to 400 degrees.

Now add the duck on a rack in your favorite roasting tin, reserving the marinade.

This should cook for approx, 20-30 minutes.

Now add the marinade and 40mls of the roasting juices in a small pan.

Put in the onions and let this come to the boil.

Cook on low gently for 2 minutes.

Add some vegetables or rice and have a wonderful meal!
